MOONG DAL

Ingredients:
1. Moong Dal -- 1Cup
2. Green Chilli -- 4
3. Red Chilli -- 3
4. Ginger(Finely Chopped) -- 2tbsp
5. Salt -- To Taste
6. Oil/Ghee -- 2tbsp
7. Lime Juice -- 3-4tbsp
8. Mustard Seeds -- 1/2tbsp
9. Cumin Seeds -- 1/2tbsp


Method To Prepare:
1. First pressure cook the Moong Dal by adding 2Cups of Water upto 5 Whistles.
2. Then heat Oil/Ghee in a small pan and add Mustard Seeds, Cumin Seeds, Ginger, Curry Leaves, Red Chilli and Grren Chilli.

3. Now add the Cooked Dal to this pan and add Salt to it. Mix well and let it boil.

4. Finally Switch of the flame and add Lime Juice to it.
5. Now Tasty Moong Dal is Ready to Serve. 
Garnish with Fresh Coriander Leaves and serve it hot with plain Rice.

BEETROOT RICE

Ingredients:
1. Beetroot(Peeled&Grated) -- 1Cup
2. Green Chilli -- 5
3. Ghee -- 3tbsp
4. Salt -- To Taste
5. Green Peas -- 1/2Cup
6. Cashews -- 1/4Cup
7. Ginger and Garlic
8. Coriander Powder -- 1tbsp
9. Cooked Basmati Rice -- 2Cups
10. Curry Leaves -- 5
11. Onions(Finely Chopped) -- 1/2Cup
12. Whole Garam Masala(Cinnamon Stick,Cloves,Bay Leaf)

Method To Prepare:
1. First heat ghee in a pan and add Whole Garam Masala, Curry Leaves and Cashews.

2. Blend Both Ginger and Garlic into Fine Paste.
3. Then add Chopped Onions and Green Chilli. Add Salt and Ginger-Garlic Paste made earlier and Fry them till the onions turn transparent.

4. Now add Green Peas and Grated Beetroot. Mix it well and close it with a lid. Cook it on a low flame till the Beetroot gets cooked well.

5. Once the Beetroot is cooked add Coriander Powder to it.
6. Now add this to Cooked Rice and Mix it well.
7. Finally Tasty and Healthy Beetroot Rice is Ready to Serve.





















Serve it either with Boondi Raitha (Or) Cucumber Raitha (Or) Onion Raitha.

BOONDI RAITHA

Ingredients:
1. Boondi -- 1Cup
2. Curd -- 1Cup
3. Salt -- To Taste
4. Cumin Powder -- To Taste
5. Water -- As Required
6. Fresh Coriander Leaves -- To Garnish

Method To Prepare :
1. First add some water to the Curd and make it into Buttermilk.(But dont add too much of water. It should be thick buttermilk.)
2. Now add Boondi, Salt and Cumin Powder to it. Mix it Well.
3. Finally Garnish it with Fresh Coriander Leaves and Serve it.

CHANNA MASALA/CHOLE

Channa Masala or Chole is a popular Vegetable Dish in Indian Cuisine. The Main Ingredient is ChickPeas.
It is popular mainly in the Punjab Region of Northern-Indian. It is often eaten with a type of fried bread and is known as Chole Bhature or even it is eaten with Poori or Roti.

Ingredients:
1. Chick Peas (Kabuli Channa) -- 1Cup
2. Onions(Finely Chopped) -- 1Cup
3. Tomato(Finely Chopped) -- 1Cup
4. Salt -- To Taste
5. Channa Masala Powder -- 2tbsp
6. Ginger-Garlic Paste -- 1tbsp
7. Cumin Seeds -- 1tbsp
8. Lime Juice -- To Taste
9. Whole Garam Masala(Cloves,Bay Leaf,Cinnamon Stick)
10. Green Chilli -- 4-5
11. Fresh Coriander Leaves -- To Garnish
12. Oil -- 4tbsp

Method To Prepare:
1. First Soak the Chick Peas for 4-5hours and pressure cook them by adding Salt.
2. Now heat oil in a pan and add Whole Garam Masala and Cumin Seeds.

3. Once they start spluttering, add chopped Onions to the pan and add 1/2tbsp of Salt.

4. When Onions become slightly brown color add Ginger-Garlic Paste and then add chopped Tomatoes and Green Chilli.

5. When the Tomatoes become soft, add 1/2Cup of Water to it. Also add Channa Masala Powder to it. Mix it well and let it boil for 5min.

6. Finally add cooked Chick Peas to the Pan and add more Salt(If Required). If you want more spicy you can even add Red Chilli Powder, but it is optional.
Cook it on a low flame for 10min.
Finally Garnish with Fresh Coriander Leaves and Serve it Hot with Poori or Roti.

Enjoy the Tasty Channa Masala with Poori or Chapathi.......................

CARROT-GREEN PEAS FRY

Ingredients:

1. Carrots(Chopped) -- 1Cup
2. Green Peas -- 1/2Cup
3. Channa Dal -- 1/2Cup
4. Salt -- To Taste
5. Red Chilli -- 4
6. Cumin Seeds -- 1tbsp
7. Garam Masala -- 1tbsp
8. Oil -- 2tbsp



Method To Prepare:
1. First heat oil in a pan and add Cumin Seeds and Red Chilli.

2. Then add Chopped Carrots, Green Peas and Channa Dal to the Pan.

3. Add salt to it and close it with a lid. Cook it on a very low flame.
4. Once when Channa Dal and Carrots are cooked, add Garam Masala and Mix it well.
5. Finally Serve it Hot with Plain Rice.

MANGO MILKSHAKE

The Mango is known as the King of Fruits. It is a Fleshy Stone Fruit. The Mango is Native to the Indian Subcontinent from where it is spread all over the World. It is one of the most cultivated Fruits of the Tropical World.
Mangoes are rich in Anti-Oxidants,Fiber and Vitamin C. It is so Juicy.
Eating Mango will prevent Cancer, it improves your Vision and Digestion. Also it reduces the Blood Pressure and Cholesterol in your body.


Ingredients:

1. Mango(Deskinned and Cut into small pieces)
2. Milk -- 2Cups
3. Sugar -- 2Tbsps







Method To Prepare:
1. Blend the Mango Pieces by adding milk to it.
2. Then transfer it to a serving Glass and if you want you can add sugar or you can have it without adding sugar.






 Serve Chilled.........................

TINDORA MASALA CURRY

Ingredients:

1. Tindora
2. Red Chilli -- 10
3. Salt -- To Taste
4. Channa Dal -- 4tbsp
5. Urad Dal -- 4tbsp
6. Coriander Seeds -- 3tbsp
7. Sesame Seeds -- 2tbsp
8. Oil -- 4tbsp


Method To Prepare:
1. First cut the Tindora length wise as shown in the picture below and Steam Cook these Tindora pieces by adding a tbsp of salt to make them soft.

2. Now lets prepare the masala required for this curry.
Making masala is very easy, just heat 1/2tbsp of oil in a pan and fry Channa Dal, Urad Dal, Coriander Seeds, Sesame Seeds, Red Chilli.
3. Then blend them all together into a fine powder.

Note: You can make this masala in Large quantity and store it for months by refrigirating it. Also not only for Tindora, you can use this masala with Brinjal, Ridge Gourd(Beerakaya).

4. Now heat 1tbsp of Oil in a pan and add the cooked Tindora Pieces and then you can add the Masala which we have prepared earlier.

5. Finally mix it well and check the salt. If its less you can add more salt.
6. Tasty and Easy Tindora Masala Curry is Ready To Serve.

Enjoy this Tasty Curry with Plain Rice..........

GINGER CHUTNEY/ALLAM PACHADI

Ingredients:
1. Ginger(Peel the skin and chop it into small pieces) -- 2 to 3 tbsp
2. Channa Dal -- 3tbsp
3. Urad Dal -- 2tbsp
4. Salt -- To Taste
5. Jaggery -- To Taste
6. Green Chill -- 2
7. Red Chilli -- 4
8. Tamarind -- Small Lemon Sized
9.Ghee -- 2tbsp
10. Mustard Seeds -- 1tbsp

Method To Prepare:

1. First heat Ghee in a Pan and add Channa Dal and Urad Dal. Fry them till they turn slightly brown color.

2. Then add Green Chilli, Red Chilli and Ginger Pieces to it. Saute for 5min.

3. Keep it a side and let it cool down.
4. Now blend the Roasted Dal mixture by adding Jaggery, Salt and Tamarind to it.
5. Finally Tranfer the Chutney to a bowl and tamper it with Mustard Seeds.
6. Tasty Ginger Chuntney is Ready to Serve.

Serve this Chutney with IDLY, Moong Dal Dosa(Pesarattu) or even with Rice.

SPINACH DAL

Ingredients:
1. Spinach Leaves -- 3Cups
2. Toor Dal -- 1Cup
3. Green Chilli -- 4-5
4. Red Chilli -- 3-4
5. Mustard Seeds -- 1Tbsp
6. Cumin Seeds -- 1Tbsp
7. Garlic Cloves -- 4-5
8. Salt -- To Taste
9. Ghee -- 2tbsp


Method To Prepare :
1. First Wash the Spinach Leaves and pressure cook it along with Toor Dal upto 4 Whistles by adding 2Cups of Water.


2. Now in a small pan heat Ghee and fry Garlic Cloves chopped into small pieces.

3. Once the Garlic Pieces turn into slight brown color, add Mustard Seeds, Cumin Seeds, Green Chilli and Red Chilli.

4. Now add this Tampering to the Cooked Dal and also add Salt to it. Mix it well and Let it Boil for 10min.

5. Finally the Tasty & Healthy Spinach Dal is Ready to Serve. 
Serve it Hot with Plain Rice.

Note: In this Dal you can even add Tamarind Juice but eating too much of Tamarind is not good for health. So i will avoid adding Tamarind in most of the Dals. It Tastes good even without Tamarind. If you want, you can happily add the Tamarind Juice and enjoy the Spinach Dal.

KADALAI CURRY

Kadalai Curry is another traditional dishes of Kerala. Kadalai Curry can be enjoyed with Appam, Dosa, Puttu and Chapattis.
Ingredients:
1. Kadala(Black Channa) -- 1Cup
2. Onion -- 1
3. Mustard Seeds -- 1tbsp
4. Red Chilli -- 7-8
5. Garlic -- 4 no.s
6. Curry Powder -- 2tbsp
7. Red Chilli Powder -- To Taste
8. Salt -- To Taste
9. Coriander Powder -- 2tbsp
10. Oil -- 2tbsp

Method To Prepare:
1. First Soak the Black Channa Overnight.
2. Then heat oil in a pressure pan and add Mustard Seeds, Red Chilli and Finely Chopped Garlic.

2. Now add chopped Onions to it.

3. Fry the Onions for 2min and add soaked black channa.

4. Then add 2Cups of Water and Salt to it. Close the lid of the pressure pan and let it cook upto 3 Whistles.
5. After it is cooked open the lid of the pan and add Coriander Powder, Curry Powder and Red Chilli Powder.

6. Mix it well and let it boil for 5-10min.
7. Finally the Tasty Kadalai Curry is Ready to Serve.

Serve it Hot either with PALAPPAM
