SOY - GREEN PEAS CURRY

Ingredients:
1. Soy Nuggets -- 2Cups
2. Green Peas -- 1Cup
3. Chopped Onions -- 1/2Cup
4. Chopped Tomato -- 1/2Cup
5. Curd -- 1/4Cup
6. Gram Flour (Besan) -- 4Tbsp
7. Salt -- To Taste
8. Green Chilli -- 5
9. Curry Leaves -- 5
10. Cumin Seeds -- 1Tbsp
11. Oil -- 2Tbsp
12.  Ginger-Garlic Paste -- 1Tbsp


Method To Prepare:
1. First heat Oil in a pan and add Slit Green Chilli, Curry Leaves, and Cumin Seeds.


2. Fry them for 2min and then add chopped Onions and Ginger-Garlic Paste to the pan.


3. Fry till the onions become translucent and then add chopped Tomato and Salt and cook till it becomes soft.


4. On the other hand, boil water in other pan and add the Soy Nuggets to the boiling water. Let it boil for 10min.


5. When the tomatoes are cooked well, mix Besan in the Curd and add it to the pan.


6. Mix it well and after 2min add Soy Nuggets and Green Peas.


7. Add 1/2Cup of Water and let it cook for 10-15min on low flame.
8. Finally Tasty Soy-Green Peas Curry is Ready To Serve...

SPINACH - YAM CURRY


Ingredients:
1. Spinach Leaves (Chopped) -- 4Cups
2. Yam (Peeled And Cut into small Cubes) -- 1Cup
3. Rai Powder (Mustard Seeds Powder) -- 1Tbsp
4. Salt -- To Taste
5. Channa Dal -- 1Tbsp
6. Tamarind Extract -- 3-4Tbsp
7. Green Chilli -- 5
8. Red Chilli -- 5
9. Curry Leaves -- 5
10. Urad Dal -- 1Tbsp
11. Cumin Seeds -- 1/2Tbsp
12. Oil -- 4Tbsp

Method To Prepare:
1. First of all pressure cook the Yam and Spinach in a pressure cooker for up to 2 long whistles.


2. Now heat Oil in a pan and Channa Dal, Urad Dal, Green Chilli, Red Chilli, Curry Leaves and Cumin Seeds.


3. Fry for 5min and then add cooked Spinach and Yam to the pan.


4. Then add Tamarind Extract and Rai Powder.


5. Mix everything well and let it cook on a low flame till all the water evaporates.
6. Finally Tasty Spinach-Yam Curry is Ready To Serve.

ROASTED PUMPKIN SOUP


Ingredients:
1. Pumpkin (Peeled And Cut into Small pieces) -- 2 Cups
2. Garlic Cloves -- 4
3. Salt -- To Taste
4. Chopped Onions -- 1/2 Cup
5. Pepper Powder -- 1 Tbsp
6. Sugar -- 1/4 Tbsp
7. Milk -- 1/2 Cup
8. Oil (Or) Butter -- 3Tbsp

Method To Prepare:
1. Heat Oil in a pan and add Garlic Cloves and chopped Onions.


2. Fry till the Onions become translucent and then add pumpkin pieces.


3. Add salt and then cook till the pumpkin becomes soft.
4. Let it cool down and then blend into smooth paste.
5. Now transfer it to the pan again and add Sugar, Pepper Powder and Milk.
6. Mix well and cook for 5min on low flame.
7. Finally Tasty Roasted Pumpkin Soup  is ready to Serve.

BLACK EYE BEANS MASALA


Ingredients:
1. Black Eye Beans (Soaked And Cooked) -- 1Cup
2. Cumin Seeds  -- 1Tbsp
3. Grated Coconut -- 1/4Cup
4. Ginger-Garlic Paste -- 2Tbsp
5. Finely Chopped Onions -- 1/2Cup
6. Chopped Tomato -- 1/2Cup
7. Salt -- To Taste
8. Oil -- 4Tbsp
9. Fresh Coriander Leaves -- To Garnish

Method To Prepare:
1. Heat oil in a kadai and add Cumin Seeds and Grated Coconut..


2. Fry for 2min and then add Chopped Onions and Ginger-Garlic Paste.


3. Fry till the Onions become transparent. And then add chopped tomatoes.


4. When the tomatoes are cooked nicely add the cooked Black Eye Beans. 
5. Add salt and  1/2Cup of Water and let it cook for 10-15min on low flame.


6. Finally Tasty Black Eye Beans Masala is Ready to Serve.

BELL PEPPER CURRY


Ingredients:
1. Mini Bell Peppers -- 15
2.  Roasted Bengal Gram -- 2Tbsp
3. Peanuts -- 2Tbsp
4. Sesame Seeds -- 2Tbsp
5. Dry Coconut Flakes -- 2Tbsp
6. Cumin Seeds -- 1Tbsp
7. Coriander Seeds -- 1Tbsp
8. Tamarind Extract -- 1/4Cup
9. Salt -- To Taste
10. Fenugreek Seeds -- 1/2Tbsp
11. Garlic Cloves -- 2
12. Red Chilli -- 10
13. Oil -- 4Tbsp.
14. Black Peppercorns -- 5

Method To Prepare:
1. First dry roast Peanuts, Sesame Seeds, Roasted Bengal Gram, Dry Coconut Flakes Separately one after another and add them all to a bowl.
2. Then roast Cumin Seeds, Coriander Seeds, Fenugreek Seeds, Red Chilli, Black Peppercorns and Garlic Cloves together and mix them with the previously roasted items.
3. When everything is cooled, add them to a blender and make a Masala Powder and keep it aside.


4. Now heat Oil in a kadai and add chopped bell peppers to it.
5. Add Salt and Tamarind Extract to it and let it cook on medium flame by closing it with a lid.


6. When the bell peppers become soft, add the masala powder which we prepared earlier and mix well.


7. Mix everything well and let it cook for 5-10min by adding 1/4Cup of water on low flame.
8. Finally Tasty Bell Pepper Curry is Ready To Serve.


Enjoy this curry as a side dish for either Chapati (Flat Bread) / Vegetable Biriyani.

DRY FRUITS LADDU


Ingredients:
1. Dates -- 10
2. Kismiss (Or) Raisins -- 1/2Cup
3. Chopped Almonds -- 1/2Cup
4. Chopped Cashew -- 1/2Cup
5. Honey -- 2Tbsp
6. Chopped Pistachios -- 1/2Cup

Method To Prepare:
1. First add Dates and Kismiss to a chopper or a blender and just crush them slightly.
2. Then transfer them to a bowl and add chopped almonds, cashews, pistachios and honey to it.


3. Now make Laddus with that mixture and Enjoy.

PALAKOVA / MILK SWEET / DOODH PEDA


Ingredients:
1. Whole Milk -- 1 Litre (Or) 4Cups
2. Sugar -- 1/4Cup
3. Almonds (Or) Raisins -- To Garnish

Method To Prepare:
1. Take a thick bottomed pan and add the milk to it.
2. Let the milk boil on a low flame. Stir it once in a while so that the fat doesn't accumulate at the bottom.
3. After sometime you can see that the milk has been reduced and starts thickening. (It almost takes around 1 hour to come to this stage.)


4. Now stir it continuously and slowly all the water evaporates and it forms a paste which is called as 
Milk Mawa or Khoya.


5. Add Sugar at this stage and mix well. After adding sugar it again releases some water.
6. Keep on mixing it continuously till all the water is evaporated. It takes around 5-10 Min.
7. Finally our Palakova / Milk Sweet / Doodh Peda is Ready. 
Garnish with your choice of Dry Fruits and Serve.
I have garnished with Chopped Almonds.


NOTE: Make this Recipe by keeping your flame very low.
