TIFFIN CENTER SAMBAR

Ingredients:
1. Toor Dal -- 2Tbsp
2. Coriander Seeds -- 1Tbsp
3. Raw Rice -- 2Tbsp
4. Fenugreek Seeds -- 1/2Tbsp
5. Curry Leaves -- 10
6. Asafoetida -- 1/2Tbsp
7. Red Chilli -- 8
8. Coconut -- 1/2Cup
9. Tamarind Extract -- 1/2Cup
10. Salt -- To Taste
11. Grated Jaggery -- 2Tbsp
12. Mustard Seeds -- 1Tbsp
13. Cumin Seeds -- 1Tbsp
14. Turmeric Powder -- 1/2Tbsp
15. Chopped Tomato -- 1/2Cup
16. Finely Chopped Vegetables (Onions, Carrots And Potato) -- 1Cup
17. Black Pepper Corns -- 6
18. Oil -- 6Tbsp

Method To Prepare:
1. First heat 4Tbsp Oil in a pan and add Coriander Seeds, Toor Dal, Rice, Fenugreek Seeds, 5Curry Leaves, Asafoetida, Red Chilli, Coconut and fry them till they are nicely cooked.


2. Then add Chopped Tomato and Turmeric Powder to the pan and let it cook till the tomatoes become soft.


3. Now let it cool down and blend into smooth paste by adding some water.
4. Then heat 2Tbsp Oil in a kadai and add Mustard Seeds, Cumin Seeds and Curry Leaves.


5. When the Mustard Seeds and Cumin Seeds Start spluttering  add the chopped vegetables to it and fry till they become soft.


6. Now add the Masala paste which we prepared earlier.


7. Add 3Cups of Water, Tamarind Extract, Salt, Grated Jaggery and let it boil on a medium flame.
8. Slowly you can observe that because of the Rice we added in the masala paste, even though you add a lot of water the sambar gets thicker.
9. So Finally Tasty Tiffin Center Sambar is Ready to Serve..


You Can Enjoy this Sambar as a Side Dish for Idly / Vada / Dosa / Spicy Pongal / Oats Pongal......

DRUMSTICK LEAVES CURRY


Ingredients:
1. Drumstick Leaves (Finely Chopped) -- 2Cups
2. Channa Dal ( Soaked for 1 Hour) -- 1Cup
3. Fresh Grated Coconut -- 1/2Cup
4. Salt -- To Taste
5. Green Chilli -- 5
6. Red Chilli -- 5
7. Urad Dal -- 1Tbsp
8. ASafoetida -- 1/4Tbsp
9. Oil -- 2Tbsp
10.  Water 3-4Cups

Method To Prepare:
1. First add 2Cups of Water, Salt and Soaked Channa Dal to a pan and let it cook till its smooth.


2. Then add finely chopped drumstick leaves to the pan.


3.  Let the drumstick leaves also cook nicely till its raw taste is vanished completely.
4. When the drumstick leaves are cooked nicely add the grated coconut to the pan and cook for 5min.


5. Now heat oil in other pan and add Urad Dal, Green Chilli and Red Chilli.


6. Then add this tampering to the drumstick leaves and channa dal mixture.


7. Finally Tasty And Healthy Drumstick Leaves Curry is Ready To Serve.


Enjoy this Curry with Hot Rice And Dry Mango-Coconut Chutney......


DRY MANGO - COCONUT CHUTNEY

Ingredients:
1. Dry Mango Pieces -- 1/4Cup
2. Grated Coconut -- 1Cup
3. Curd -- 1/2Cup
4. Green Chilli -- 4-5
5. Salt -- To Taste
6. Curry Leaves, Oil, Mustard Seeds And Red Chilli -- For Tampering

Method To Prepare:
1. Add Dry Mango, Grated Coconut, Curd, Green Chilli and Salt to a blender and blend them till smooth.
2. Now heat oil in a pan tamper it with Curry leaves, mustard seeds and red chilli.
3. Finally Dry Mango-Coconut Chutney is Ready To Serve.

4. Tomato (Finely Chopped) -- 1/2Cup
5. Garlic Cloves (Chopped) -- 5
6. Green Chilli -- 5
7. Curry Leaves -- 5
8. Asafoetida -- 1/4Tbsp
9. Salt -- To Taste
10. Oil -- 4Tbsp
11. Red Chilli Powder -- 1/2Tbsp
12. Tamarind Extract -- 2Tbsp

Method To Prepare:
1. First pressure cook both Toor Dal and Kale Leaves Separately and keep aside.
2. Now heat Oil in a pan and add Curry Leaves, Green Chilli, Asafoetida and Garlic Cloves.


3. Fry till the garlic becomes soft.
4. Then add chopped Onions to the pan.


5. Fry till the onions become transparent.
6. Now add chopped tomatoes and cook till they become soft.


7. Then add cooked Kale Leaves to the pan andd cook for 2min.


8. Later add cooked Dal, Tamarind Extract, Salt and Red Chilli Powder to the pan and mix well.


9. Let the Dal cook for 10-15 min on medium flame.
10. Finally Tasty And Healthy Kale Dal is Ready To Serve......

MIX VEG PORIYAL


Ingredients:
1. Carrots (Cut into small cubes) -- 1/2Cup
2. Green Bell Peppers (Cut into small pieces) -- 1/2Cup
3. Cabbage (Chopped Finely) -- 1/2Cup
4. Grated Cabbage -- 1/4Cup
5. Channa Dal (Soaked For 1hr) -- 1/4Cup
6. Cumin Seeds -- 2Tbsp
7. Urad Dal -- 2Tbsp
8. Green Chilli -- 5
9. Red Chilli -- 3
10. Salt -- To Taste
11. Oil -- 4Tbsp

Method To Prepare:
1. Heat Oil in a pan and add Urad dal, Cumin seeds, Green chilli and Red chilli.


2. Fry for 2min and then add the chopped vegetables (Carrots, Cabbage and Green Bell Pepper) to the pan.


3. Add salt and cook them till they become soft..
4. Then add soaked Channa Dal to the pan.


5. Mix it well and cook for 2min.
6. Later add the Grated Coconut to the pan.


7. Mix everything well and cook for 5-10min  on a very low flame.
8. Finally Tasty Mix Veg Poriyal is Ready to Serve.

TAWA BHINDI


Ingredients:
1. Bhindi (Cut length wise) 
2. Onions ( Cut as Juliennes) -- 1Cup
3. Salt -- To Taste
4. Oil -- 4Tbsp
5. Cumin Seeds -- 2Tbsp
6. Amchoor Powder -- 1Tbsp
7. Garam Masala -- 1Tbsp
8. Red Chilli Powder -- 1Tbsp
9. Chaat Masala -- 1/2Tbsp
10. Fresh Coriander Leaves -- To Garnish

Method To Prepare:
1. First heat Oil in a Tawa and add Cumin Seeds.


2. Once they start spluttering, add the cut Bhindi to the Pan.


3. Add salt and let them cook.
4. After the bhindi is half cooked add the onions and mix well.


5. Now fry them till the Onions and Bhindi are cooked well.
6. Then add the spices ( Amchoor Powder, Red Chilli Powder, Chaat Masala and Garam Masala).


7. Mix everthing nicely and let it cook for 5-10min on a very low flame.
8. Finally Tasty Tawa Bhindi is Ready to Serve.


Garnish with Fresh Coriander Leaves and Serve hot with Plain Rice.........

HEALTHY OATMEAL

INGREDIENTS:
1. Oats -- 1/2Cup
2. Banana (Cut into Slices) -- 1/2 Banana
3. Dates (Cut into pieces) -- 2
4. Boiled Milk -- 1/2Cup
5. Pomegranate Seeds -- To Garnish

Method To Prepare:
1. Add Oats to a pan and add water to it. Cook Oats till it becomes a thick paste.


2. Now let it cool down and then transfer it to a serving bowl.
3. Add Banana slices and Dates to it.


4. Then add boiled milk to it and mix well.


5.  Finally Garnish with Pomegranate Seeds and Serve immediately.


Healthy And Tasty Oatmeal Breakfast is Ready.
