BAINGAN BARTHA

Ingredients:
1. Egg Plant - 1
2. Onions(Finely Chopped) -- 1Cup
3. Tomato(Cut into Small Pieces) -- 1/2Cup
4. Salt -- To Taste
5. Green Chilli -- 7-8
6. Coriander Leaves
7. Ginger Garlic Paste -- 1tbsp
8. Coriander Powder -- 1tbsp
9. Cumin Seeds -- 1tbsp
10. Red Chilli Powder -- To Taste
11. Oil -- 2tbsp

Method To Prepare:
1. First wash the Eggplant with water and wipe it with a dry cloth. 
Apply oil to it and you can Roast it in Three ways.
(i) Roast it Directly on the Flame.
(ii) Roast it in the Oven for around 25Min at 300 degrees temperature
(iii) After applying the oil just pin it all around to make small holes and wrap it in a paper towel. Now Roast it in the Microwave for 4-5Minutes. (I have Roasted the Eggplant in Microwave).
2. Once the Eggplant gets Roasted, let it cool for 5min and then peel off the skin. Take the paste into a bowl and add a pinch of Turmeric Powder and Salt to it. Mix it well and keep it aside.
Now lets start the next procedure for making Baingan Bartha.

3. Now heat oil in a pan and add Cumin Seeds.

4. Once they start spluttering, add Green Chilli, chopped Onions and Ginger-Garlic Paste to it. Fry them till the Onions turn transparent.
5. Then add chopped Tomatoes and salt to it and fry till the they become soft.

6. Once the tomatoes are cooked, add Coriander Powder and Coriander Leaves.

7. Mix it well and now add the mashed Eggplant Paste.

8. Mix it well and finally adjust the taste by adding Red Chilli Powder and Salt(If Required).

9. Tasty Baingan Bartha is Ready to Serve.
10. Serve it Hot with either Plain Rice or Roti.
